Tired of opening your lunch box every day and seeing the same bland ham and American cheese on mediocre white bread? Want to take a stand against home lunch conformity? Behold, two great recipes that will let you be the envy of your lunch table and make delectable and creative sandwiches
1. Smoked Mozzarella and Pesto Sandwich
What you’ll need:
2 tablespoons prepared basil pesto sauce
2 slices sourdough bread, lightly toasted
1 tablespoon mayonnaise
1 tablespoon freshly grated Parmesan cheese
1 slice provolone cheese
1/4 cup shredded smoked mozzarella cheese
1 lettuce leaf
2 slices tomato
Directions:
Spread a thin layer of pesto sauce onto one side of a slice of bread. Spread a thin layer of mayonnaise onto one side of the other slice. Sprinkle Parmesan cheese over the pesto and mayonnaise. Layer the provolone and mozzarella cheese onto one slice, top with lettuce and tomato, and the other slice of bread. Put together and you’ve got your masterpiece.
2. California Club Ham Sandwich (Serves 2)
What you’ll need:
6 slices (6 ounces) ham, sliced thin
4 slices seven-grain bread
2 slices provolone cheese
4 lettuce leaves
2 tablespoons honey mustard
Directions:
Toast seven-grain bread; spread one side of each slice with honey mustard. Layer ham on two slices of bread. Top with provolone cheese and lettuce leaves. Add remaining bread; cut into quarters and serve.
